Sandor Katz "A Community Conversation on Fermentation as Relocalization" 4-1-2012

Sandor Ellix Katz is a renowned fermentation revivalist and author of "Wild Fermentation: The Flavor, Nutrition and Craft of Live-Culture Foods" and "The Revolution Will Not Be Microwaved". In this seminar, he discusses his new book (June 2012) "The Art of Fermentation: An In-Depth Exploration of Essential Concepts and Processes from Around the World". Sandor is joined by fermenters from the Fingerlakes region of NY State to share their vision of the crucial role food preservation plays in the relocalization of food systems.
