"Thanks for the tip about choosing varieties. I have no idea if the variety I chose last year was suitable to freezing or not, but I'll pay more attention this year. Also, I did make the mistake of saving a couple days' worth of beans…"

"I know Roxy thinks this :-)-- but, I get good results with ziplocs. My technique for getting air out isn't at all elaborate: I just fill the bag, close it most of the way, squeeze out the air, and seal it the rest of the way."

"I was wondering if a vacuum sealer would help. I've seen them at all price points--from $20 for a cheapie one to $400+. Do you have a particular vacuum sealer that you'd recommend?"

"Your downfall - ziploc bags. A vacuum sealer will solve the problem - but of course that's pricey. I love mine though and have 5 year old beans that still have a snap to them. I do put them through a salad spinner and pat them dry before…"

disappointment with green beans

This past gardening season was the first time I had an excess of anything to preserve---I had green beans coming out my ears! I decided to freeze them, and read that blanching them first preserved the color and texture better than simply freezing them. So, I blanched them and put them in Ziploc freezer bags.This past week, I took the first bag of green beans out to try, and I was really disappointed. They were limp and soggy!
