Nice to hear from you Carol, I hope your trips were a success and that all the "kids" are settled. I made a froze a ton of the zucchini cakes, helped by this handy shrink-wrapper contraption I I think there is a lot of flexibility in the recepi. I had to alter the Moosewood based version we got through Ithican quite a lot before I was happy with the texture/flavor. I am sure it can be done without eggs. I have never worked with egg replacement products in cooking but you are right, more flour, maybe even cook up a roux to fold in instead of the whipped egg white, or maybe riccotta. That might lift the texture better than a roux. I hope to do a bunch of drying when I return from my trip this weekend, thanks for the ideas. As long as there are Romas to be had by then I will have them in my dehydrator!
I am sure you are busy, but let me know if you'd like to do any cooking together this fall, I'd love to try something new or do a pie exchange, etc. I will do as much drying as I can manage before the weather changes, and there are these wonderful citrus ornaments I make that I'd love to do with interested neighbor gals over hot cider :)

Just today I found my food dryer in a box! Joy! But what to dry? Not to experienced, only have done holiday ornaments with sliced citrus...
