Old Hen Processing Workshop at Krys Cail's Country Woodlot and Kitchen

November 6, 2010 from 6:30pm to 8:30pm
We are going to show our methods for making old laying hens into useful products, such as soup stock, chicken soup, and chicken nuggets. This is a "from start" demonstration, using the hatchet-in-the-woodlot kill method. Please, no children or dogs attending. We will process a small number (about 4) of hens under home-kitchen conditions. Info about local resources, as well as sharing information about "putting up" food in a variety of ways.
Do you have any expertise or resources that you can offer to the IthaCan community?
I have been gardening for many years (more that a decade) and have learned some stuff about seed saving, working with native and volunteer plants as part of a garden. I have tried some lacto-fermentation recipes with success. I have made soft yogurt cheese and mozzarella. I keep a flock of chickens and can offer advice in coop building, and very basic info about keeping them.
What is your favorite home-preserved food?
saurkraut with homemade mayo (using eggs from our chickens)
