This past gardening season was the first time I had an excess of anything to preserve---I had green beans coming out my ears! I decided to freeze them, and read that blanching them first preserved the color and texture better than simply freezing them. So, I blanched them and put them in Ziploc freezer bags.
This past week, I took the first bag of green beans out to try, and I was really disappointed. They were limp and soggy! Did I do something wrong, or is it to be expected that frozen green beans will change this much? The flavor was fine, but the texture was just awful.
