My husband grew up in the UK "bottling" fruit and jams by putting in jars and simply heating in the oven.  Is this safe?  He says everyone did and still does this over there. No water bath?

Late response to your question but I was reading about sterilizing in the oven today and didn't find anything on the official sites, but I did find many official food safety sites stating that canning in the oven is not safe. It was done, but is not recommended. the oven does not get hot enough to boil the liquid inside the jars, which hot water and pressure canners do. 

 

I sterilize my jars in boiling water and then keep them hot in the oven set at 180, but haven't ever tried to sterilize dry.
