Permalink Reply by Liz Falk on July 10, 2011 at 2:34pm Late response to your question but I was reading about sterilizing in the oven today and didn't find anything on the official sites, but I did find many official food safety sites stating that canning in the oven is not safe. It was done, but is not recommended. the oven does not get hot enough to boil the liquid inside the jars, which hot water and pressure canners do.
