Event Description

This workshop is part of White Hawk's "Sustainability Series." Come participate in and observe a hard cheese-making workshop! You'll learn the techniques, tips, and procedures to make your own hard cheese at home. We'll start with fresh milk and end with a Farmhouse Cheddar cheese wheel.

During break there will be a tour of the village for those interested.

I'm so bummed, I won't be able to make it... my hubbie volunteered me to go to a train show with our little one since saturday is supposedly bad weather and sunday nice and sunny... and since he's working on our goat barn all his free time I can't quite say no :-(

was making herbed chevre today, wondering about hard cheeses...

Sorry, I can't come and I know it is a long way but if anyone from around the north end comes there is a good source for raw cow's milk in Clifton Springs. Galen farms sells for $3 a gallon.

ah, that does need clarification :-)
my tastebuds don't get much say in the type of milk, my immune system can't take cow and that's that, unfortunately. Hence the goats!

Sorry, I should clarify since I keep getting offers for raw goat's milk :P
Looking for cow's milk. My taste buds can't stand cow's milk for some reason...I've tried so many times to convince it otherwise, would be SO much easier! ugh...

A message from Laura Woinoski to all members of Cheesemaking on IthaCan!

Does anyone have a source of raw milk they could share?
I am running a cheesemaking workshop in two weeks and would prefer to use raw or at least farm-fresh milk.
Even if someone has a share in Meadowsweet and can share a bit, that would be helpful!

have you tried side hill acres farm? their webaddress is http://www.sidehillacres.bizland.com/
when I got milk from their store it was $5.50 a gallon (I think it's $6.50 at greenstar) and as far as I know it's raw
I can bring couple of gallons of our own goat milk, but since we're a (very) small outfit I'm not sure how clean it is for hard cheese making. It seems to set hard cheese curds differently from side hill acres milk, though we have no trouble whatsoever with the chevre and custards... Hope this helps, Susan
