Event Description

One morning, two cheeses! Learn the basics of how to make soft cheeses.

I can have 6 people at my house for a soft cheese gathering.

We'll make mozzarella and ricotta, so you'll all be ready to whip up the best lasagna you've ever had when you return to your own kitchens.

We'll be using locally produced raw milk.

Attendees will be able to bring home samples of each type of cheese.

I'll provide the main course for lunch. Can someone else bring salad? And another person bring bread?

Please indicate any dietary restrictions on your RSVP.

We will start at 9:00am sharp. See Google map posted above for directions.

I don't think the Schefflers have a website, but their phone number is 898-5137. Eileen Scheffler is a member of Ithacan. Again they have certified organic raw milk and meats and sometimes veggies at very reasonable prices. They also sell to Organic Valley.

Soft cheese attendees...I made copies of the recipes we used, but then forgot to give them to you all! If you'd like me to mail 'em to you (snail mail), let me know.

Soft Cheesers: In addition to bringing two 1 cup containers for cheese, if you'd like to take some whey home bring a quart jar with lid.

Soft cheesemaking gathering is coming up this Saturday, May 1st. We'll start right a 9am. Come a tad early if you like. Please bring two small containers (1 cup) for take home mozzarella & ricotta. See ya then, Kate

Shirley, we'll be using locally produced raw milk in this workshop, so you won't need to bring your own.

For soft cheeses at home, you'll need some rennet, citric acid, cheesecloth, a colander, large stainless pot and a good thermometer (40°-240° range).

Hi Kate, I'll bring salad. May I bring my own milk (raw, organic.) Actually, are there other things like cheesecloth that I should get so that I could continue to make cheese at home?
